Oh yes. I am a master of the domestic arts. Are you laughing yet? My good friend the Femiknit Mafia has started a Turtle Knit-Along, to motivate and cheer on those of us who are - ahem - a little slow. (And if you think *you're* moving slowly, go make yourself feel better). If you care to join us in this slow-but-hopefully-steady endeavor just head over there and let her know. And in that spirit, I'm joining in the recipe-sharing fun. I'll show you mine if you show me yours, okay? Mango black beans (adapted from Mollie Katzen's Vegetable Heaven, which is one of my favorite cookbooks ever. This is always a big hit at parties.) You'll need: olive oil a red onion, minced 1 t garlic (or more if you want it) 1 jalapeno pepper (seed it if you don't like your food too spicy) 1 1/2 T ginger (fresh, please don't use the crap in a jar) 1 1/2 t ground cumin or cumin seeds 1 1/2 t salt 6 cups or so of cooked black beans (if you're using canned, I recommend organic because they're less salty - regardless, give them a good rinse beforehand) 6 T lime juice 2 ripe mangoes, chopped Cilantro if you like it 1 Lime, cut into wedges Heat the oil, and throw the garlic, chile, ginger, cumin, salt, and most of the onion into the pan. Give it a couple of minutes and add the beans and about half the lime juice. Cook just until the beans are heated through, and smush them a little with a spoon. Spoon the mixture into a bowl and add about half the mangoes. Stir it well, add the rest of the lime juice and some black pepper if you want a little extra kick, and cover it for about 15 minutes. Serve it at whatever temperature you like it with the extra red onion and mangoes on top and the cilantro (if you're using it). Put the lime wedges around the edge for that Martha Stewart touch. This takes about 45 minutes from start to finish. It's great over lime basmati rice. Edited to add: Oh yeah, and if you make this, please let me know how it comes out!
